Pecan Balls

I remember looking forward to these cloud-like cookies once a year as Mom didn’t make these except when it was Christmas time. With Christmas just around the corner, I’m excited to make these & share the joy & wonderment with my daughter. I’m sure once she’s old enough to know that not everything she can put her hands on goes into her mouth, she’ll have fun rolling the cookies into balls & tossing them in snow…I mean powdered sugar. This year I’ll make sure I have play-dough for her to play with while I roll a batch of these.

Ingredients:

  • 1lb butter (2c or 4 sticks – just for you Joanne ;))
  • 1c powdered sugar
  • 4 1/2c cake flour or 4c regular flour
  • 2t vanilla (I usually put 1 more teaspoon in – more flavor is always good yumminess!)
  • 2c chopped pecans

Directions:

Mix all above ingredients until well combined. Make into balls (I use a tablespoon scoop to help measure & keep cookie sizes roughly the same size). Bake in an oven preheated to 300 degrees for 35 to 40 minutes (they will start turning slightly brown).

In a brown paper bag, put some powdered sugar & then toss a handful of hot/warm cookies. Once coated, set on a cooling rack & continue with the rest of the batch.

    1. They are! I realized I incorrectly described what they are like. They are more like snowballs, not clouds. They are light but they melt in your mouth once you bite into them. One of my favorite cookies I try to restrain myself from making year ’round!
